Lemon Meringue Tartlets

G'Day! Whether you are from Australia, from Canada or from the rest of the world, you will be happy you came across this yummy dessert recipe from a new blog that we love called G'Day Souffle. The chef at this yummy blog is trained in French cuisine from the Cordon Bleu school in Paris, so you will surely enjoy her recipes!

This recipe is for Lemon Meringue Tartlets and was inspired by Rachel Khoo, a young food writer and chef who used to own a 2 table restaurant in Paris and a TV cooking show. She is adorable 1950's chic with classic red lips. black eye liners and fun dresses. Her creation was for a 'Grapefruit and Pepper Meringue Tartlet', which was intriguing enough for the G'Day Souffle chef to come up with her own version of this recipe using the classic lemon meringue.

It uses a biscuit base of butter, sugar, flour, egg yolks, lemon zest, salt, flour and baking powder. The center is a classic lemon curd made to perfection with lemons, eggs, sugar, salt and butter. then to top it all off with style is a thick and fluffy meringue made of egg whites, sugar and salt.

The result when you cut in is a thick and oozing lemon curd with a nice crunchy biscuit base and slightly torched meringue. To torch the meringue you can either use a small propane baking torch (these are so much fun, but be careful as it will burn skin easily!) or you can broil the tarts in the oven for just a few minutes being super careful that you do not forget about them and ruin all your hard work.
