Summer time is a great time for salads and pasta salads of all kinds and everyone will love this Loaded Pasta Salad recipe from the Midnight Baker. Pasta salads are not only great tasting, they are always super simple to make, and don't require a lot of fuss. Especially if you are just using left overs that are already available in your refrigerator. Its a great way to make a full meal too, and serving it cold is the best way to go in the hot summer months when you don't even want to think about turning on your oven.

Pasta salads most often include pasta obviously, mixed with cooked or raw vegetables, in a vinegar or creamy mayonnaise dressing. Pasta salads became very popular in the 1950s when people were looking for quick and easy, yet affordable meal ideas for their families and for gatherings. The nice thing about pasta salads is that they are very filling, and have a lot of good for you foods in them, they can act as a meal all in one, which is a great way to use up leftovers in the fridge and not waste too much food ever. Kids always seem to like them, maybe because they are reminded of an all time favourite, Mac n Cheese.

This particular recipe is made with a bunch of good stuff, fully loaded into the pasta. They use broccoli, but you can use any veggies you like, the bacon and the cheese just bring it up that extra level, and make it so tasty! They serve salads like this at delis and in the delis of grocery stores, but why not make your own for cheaper? It would last throughout the week, if stored in the fridge and makes a great snack, side dish or whole meal! Head over to 'The Midnight Baker' for more by clicking on the link in the section below!
