One of my favorite things to eat in my cafeteria was the chocolate macaroon cookies the cafeteria ladies made. They were massive infusions of chocolate and coconut and we would share one and nibble bits between sips of hot chocolate, tea or coffee. This brownie is like something that you would find in your school’s cafeteria; delicious, simple and no-nonsense.

Brownies come in every design imaginable. Sometimes they are not even chocolate, but lemon or caramel or butterscotch. The most traditional chocolate brownies are made with up to two cups of butter and eight ounces of chocolate—and that’s before you start the icing. For best brownies, be sure the chocolate is entirely cooled if you use squares. This recipe uses cocoa, which provides the same chocolate taste with a bit more ease in the making. Eggs ensure a light and airy cake.

The icing is a traditional butter icing made with chocolate cocoa as well. This icing is best made when the butter is very soft (but not melted or runny) and you allow up to eight minutes of blending to maximize the volume and air that gets in to the icing. That blending will ensure a creamy and light texture and flavor that your friends will adore. If you want to add depth to this icing, add a teaspoon of vanilla and one teaspoon of espresso to the mix. Always blend really really well.
