Mediterranean Chicken Pasta

There is something about goat cheese and sun-dried tomatoes that just screams Mediterranean. The Mediterranean Chicken Pasta is another great dish from Menu Musings that combines authentic Mediterranean ingredients and is a great way to include more vegetables in your dinner, you might even say, hide vegetables in your dinner, for those picky eaters who need their greens dressed up a bit.

This pasta is reminiscent of a cold pasta salad dish I used to order from the deli section of my local grocery store, sans the chicken. The big, thick pene noodles are a key element in this particular pasta dish because this is a pasta you stab and eat, not twirl like your spaghettis and linguinis. The feta and spinach in this dish really soaks up that garlic wine sauce well and combines perfectly with the saltiness of the sun dried tomatoes creating a flavour that goes really well with the texture of the chicken breast tenderloins.

One thing the author stresses is your right to follow your senses when preparing this dish. You dont have to follow the instructions to the letter. Mix and match ingredients to your liking. I think some chopped, roasted asparagus would go well in here, and as a substitute for the chicken, perhaps some fresh, grilled sardines (without the feta would be my preference) to give it a Portuguese/Spanish flair. The author recommends you make the garlic wine sauce ahead of time and store it in the fridge so that when the time comes, all you need to do to make this dish come together is cook the chicken and youre already, mostly done. I personally like letting any garlic heavy sauces sit for a while to really soak up that garlic flavour.
