Mexican Chicken Cornbread Casserole is a fabulous blend of all things Mexican that make that culture’s foods so unique and delicious. And it all comes together in an easy to make, quick and great recipe that is a casserole. Almost by definition that means a forgiving dish where proportions can be played with and still have a fantastic meal turn out. This dish is actually baked in a cast iron fry pan, which is a great way to bake and serve some thing. As well, there are two layers to this dish, a crusty corn bread on top, and the blend of chicken, tomato and other ingredients on bottom.

This recipe gets easy because the corn bread is made from a mix. Of all the commercial mixes, corn bread is one that always seems to turn out quite well. It still is not nearly as good as one that you make home made, but it is a great substitute when you are in a rush, or just do not have the energy to put together this part from scratch. The base is a great blend of nutritious chicken, tomato, corn and other ingredients. Corn is especially good here because it will reinforce and accentuate the corn bread that is on top of this dish. Finally the entire dish is smothered in cheese and the whole thing is popped in the oven and baked until the corn bread is golden brown. Yum.

This is a delicious recipe that is quick to make if you buy the chicken already cooked and use a commercial blend for the corn bread. The corn makes the corn bread a sweet flavored biscuit that is delicious with the spicy chicken and tomato stew that forms the base. It is not too difficult to make, and should come together easily and well. The family will love it, and you will too. So book mark this page, and enjoy this dish soon with your friends and family.
