Mini Turtle Pumpkin Cheesecakes
Your kids will be absolutely crazy for this recipe for Mini Turtle Pumpkin Cheesecakes, especially if you let them choose and add their own toppings to their personal little cakes. This pretty little dessert has three toppings including a caramel sauce that you can make from scratch (do; the flavor will be inimitable), chopped pecans, and melted chocolate. The recipe is made up in individual muffin tins so that you can separately add the toppings to this recipe. An Oreo cookie forms the base and then a lovely pumpkin filling is the cheesecake. This part of the recipe can be kept for several days in the fridge and it can also be frozen to be used at a later date. This is a great recipe to make in bulk and freeze for exactly that reason. When you want to serve the Mini Turtle Pumpkin Cheesecakes, you can prepare the caramel and chop the pecans in order to get the ‘turtle’ in to the mix.
