Moms Macaroni Salad

A mother's love. Mom's recipes...and in this case, Mom's Macaroni Salad from our featured blog 'Fav Family Recipes'. In my household, my Mom's classic recipes are her lasagna, her pickles and her borscht. Although when you ask her to make her borscht she always complains that it is not like her mothers! To me, it is perfect and I guess there is just something about our own mother's recipes that nothing else can beat.

So this Mom's Macaroni Salad instantly caught my interest because only the really special recipes are labelled 'Mom's'. It is a perfect combination of macroni/ or shell noodles, creamy mayo, sour cream, mustard and vinegar. ( I used white vinegar instead of apple cider, and it was also delicious). Add to that some delicious finely chopped vegetables like carrots, cucumbers, peas and dill pickles and you have a really delicious lunch or pot luck meal.

When you are making any sort of pasta salad be sure that the macaroni has cooled entirely before you start mixing all the ingredients together. This will help to ensure that the consistency stay creamy rather than sticky. If you want to make the recipe a tad bit healthier for the heart and digestion then you can always try some whole grain pasta (whole wheat, kamut, quinoa etc) which will change the taste a little bit, but also add a lot more fiber if that is what you are seeking. On average we should be eating 25-30 grams of fiber each day, so this is the perfect kind of recipe to make that change.
