My Favorite Gingerbread Men

For most people, gingerbread cookies are synonymous with Christmas time. Especially gingerbread men and gingerbread houses. Gingerbread goes way back and started with ginger root which is a very common food used in Chinese cuisine and Chinese medicine. Ginger was brought back to Europe via the Silk Road and was first used as a seasoning for meat and as a stomach-soothing aid and a digestive aid as well. It can be used in teas, smoothies and juices, and of course, dessert recipes like ginger bread. Gingerbread desserts were made in ancient Greece and then, later on, became very popular at Medieval festivals and fairs. They were mainly eaten by people of wealth and would sometimes be decorated with gold leaf. Eventually, gingerbread men and gingerbread houses became popular and it was one of the recipes people brought with them when they started settling in Canada and the US. Now there are many easy dessert recipes that involve gingerbread flavouring which is a mix of ginger root, molasses, and spices like cinnamon, nutmeg and allspice. One of the most popular speciality drinks at Christmas time is a gingerbread late.

Sally from Sally's Baking Addiction shares many easy dessert recipes including this recipe for gingerbread men cookies. She hadn't found a gingerbread recipe that she really loved 100%, and even though the ones she tried were really yummy, she wanted to find the perfect gingerbread man cookie recipe. She took her time to perfect the recipe and created that memorable gingerbread flavour we all know and love. For the most part, gingerbread men cookie recipes will usually start out the same. The recipes have a lot of flour in them so that the cookies will keep their form. Then, you add in the molasses and spice, the egg, butter, and sugar. The recipe Sally used is based off of her mom’s classic recipe but she ended up adding a bit more molasses to her recipe and she also added more spice into her recipe. That means that these gingerbread cookies have a lot of flavours. She also had to add in more flour to compensate for the amount of molasses she added and she used brown sugar instead of white sugar.

Her recipe creates the perfect, soft gingerbread cookies with a whole lot of flavour. The only thing is, that the dough can be tricky to work with because it's pretty sticky. That's why it's very important to chill the dough. Which is why you need to make sure that you give yourself enough time to make this recipe. Sally recommends chilling the gingerbread men cookie dough overnight, but if you don't have that much time, 3 hours will do. So wrap the mixed dough in plastic wrap to chill, but to make it easier to roll out once you take it out of the fridge, split the dough in half and wrap two parts of dough instead of one. After it's all wrapped, make sure you flatten it into a large disc which will also make it easier to roll out. Plus, it will also chill faster that way too. Once your dough has been chilled, you can roll it out using lots of flour as needed, and don't worry; the flour won't show up when your cookies are baked. Then you can use your cookie cutter to create the little men and bake them. Once they are baked, let them cool off really well, and then you can decorate them as you'd like with the icing of your choice. Have the kids help out with this part and have some fun with it.***
