Try something new and different with this no back chocolate peanut butter oatmeal cookie. If you have not had cookies made without flour before, this is a great recipe to try. It is made on the stove top and so the cookies are quick and easy to make. They are also really affordable, and, can we say it? They may even be a fairly nutritious snack, if you are careful with the ingredient choices.

These cookies combine peanut butter, oatmeal and chocolate. Depending on what you choose with these three ingredients, these cookies could carry a good bump in nutrition. Peanut butter, for example, actually contains resveratrol, a compound that is also found in red wine and red grapes. It is a powerful anti-oxidant and is thought to also contain anti-carcinogenic properties. If you eat peanut butter without added salt or sugar, you’re also getting all the benefits of a nut, which are considerable. Oatmeal is another heart smart food choice, again depending on the type of oats you buy. Choose a variety that is not processed with sugars or other added ingredients. Oats contain lots of fiber and can help to lower cholesterol if eaten on a regular basis. Finally, there is chocolate. We know that chocolate, at least with 70 percent in the chips or bar, is a great source of flavonoids that are great anti-oxidants and anti-inflammatories. Of course, there is always a risk with chocolate because of its high fat content, high sugar content (usually) and caffeine. So go easy on the chocolate.

Together, these ingredients can produce a great cookie that could even work like a breakfast cookie. This is an easy mix to have young bakers put together since the entire thing is made on the stove top. So why not try these cookies out today? They could become a go to snack for your entire family tomorrow!
