No Bake Mini Cheesecakes

With the holidays getting close it is time to start thinking about what you will be bringing to your next holiday party or pot luck. This no bake mini cheesecake recipe is the perfect festive sweet treat to add some holiday cheer to any occasion. If you are a fan of chocolate and mint recipes, then this one is for you. The ingredients are fairly simple with your classic cream cheese, melted chocolate and crushed candy canes.

You can really play with the creativity of these little no bake cheesecake treats by adding different color frostings or decorations that suit your theme. The most amount of effort required in this recipe is the melting of the chocolate which can be done in a double boiler, the microwave of over a pot of water.

Melting Chocolate in a Double Boiler

Be sure to use a good quality chocolate. We like to use chocolate in block form but , you can also use chocolate chips or chocolate melting wafers. If you are using block chocolate you will need to chop it into small pieces for so it will melt evenly. Melt your chocolate over low heat and stir slowly with a spatula occasionally. Be careful not to splash any water into the chocolate which will ruin the consistency entirely.

Melting Chocolate Using a Microwave

Place the chopped chocolate in a small microwave-safe bowl. Microwave on medium (50% power) for 1 minute. Stir. Microwave 30 seconds more or until chocolate is softened. Stir until smooth and let cool.
