Gelatin is processed collagen, a fibrous protein that allows the connective tissues of your body to stretch and bend without breaking. Collagen itself is not used for cooking, because it not dissolvable in water. To make gelatin from collagen, use strong solutions to partially, not fully, break down collagen to such an extent as to be dissolvable by water. Gelatin is bought in powdered form. Once it is dissolved in boiling water, its structure loosens, and it is refrigerated, the loosened gelatin structure soaks up the water like a sponge, trapping them inside pockets. And it is the water trapped inside that gives the jello their characteristic wiggle. To make this a healthier recipe, consider using real whipped cream instead of cool whip.
