You can use either Stevia, cane sugar or honey in the place of refined sugar. For the crust, you don’t have to add any extra sugar since Graham crackers are on the sweeter side and instead of using butter to bind the crust you can simply switch it with melted coconut oil. This way it also adds a subtle coconut flavor which goes well with pineapple. In the place of whipped topping use coconut cream or even coconut ice cream. You can also make a healthier version of Whipped topping in your kitchen using heavy whipping cream with a cane or organic sugar. To make it extra thick, add a tablespoon or two of instant vanilla pudding when you’re whipping the cream. Adding instant vanilla pudding prevents the watery texture in the whipping cream making it firm which is something you want in this recipe. Pineapple mainly originated in tropical countries and was first discovered in South America. The nutritional value of pineapple mostly comes from the enzymes present in it that are highly anti-inflammatory, muscle relaxant, and aid digestion. Other essential pineapple nutrients are vitamin C and A. For the best quality of pineapples, always look for Costa Rica- or Hawaii-grown ones. Did you know besides adding pineapples in fruit salads and tropical drinks they are also used in making wine? Apart from Graham crackers for the crust, you can also use other alternatives like wafers, chocolate flavored crackers, ginger snaps, ‘Digestive’ or ‘Rich Tea biscuits,' lady finger crust, shortbread, etc. You could also use Oreo or Sandies cookies, Honey Nut Cheerios, or Sara Lee pound cake, yellow cake mix, Milk Arrowroots, soda crackers, etc. The choice is endless with several excellent options.
