No-Roll Sugar Cookies

Try this No Roll Sugar Cookies recipe and see how much easier a cookies recipe can be when you can skip the extra step to roll out the dough before you cut it and use it. this sugar cookies recipe uses a few ingredients that make these cookies taste a bit more cake like in their texture and consistency. Cookies, at their simplest, are a combination of butter, sugar and flour, with some leavening agent and flavoring. That is what gives them a cookie texture, a somewhat dense, often chewy or crunchy taste that can even become granular depending on how you have made the cookie recipe and what sugar you have used. When you begin to add oil, eggs and other ingredients that are more commonly found in a cake, you begin to make a cake, and so the cookie recipe and the cookie begin to get the look and feel of a tiny cake. A Madeleine might be one of the best examples of a really cake like cookie (which is fabulously delicious, actually). In any case, this recipe does start to tend towards a cake and has a lighter consistency and possibly more rise than you might otherwise expect in a cookie.

There is a second part to this cookie (and actually a third part, too), namely, an icing that you add once the cookies are cool. This is a very simple glaze, really, that the kids could make for you. Just toss all the ingredients in to a bowl and mix. You could even make this icing by hand, rather than using the mixer, if you are in a pinch (or just do not feel like washing the beaters!). This icing adds some nice vanilla flavor to complement the simple flavor of the sugar cookies, which are also loaded with vanilla extract. If you are making cookies, cakes and other treats such as this one where vanilla is the main flavoring, consider making your own vanilla. It is quite expensive, but there is absolutely no comparison to what you can make at home on your own and what is available in the local grocery store (or even at the specialty store). Simply open a bottle of vodka that is at least 750 mls. Add in about twelve vanilla beans, whole, and slit from top to bottom. You can scrape some of them out and put the flesh and seeds in to the vodka. Let this mixture sit in a cupboard for about three to six months, giving it an occasional shake. That is it. From then on, simply add more vodka as the vanilla gets used up. You will never buy vanilla again. Enjoy this soon.
