If you are making cookies, cakes and other treats such as this one where vanilla is the main flavoring, consider making your own vanilla. It is quite expensive, but there is absolutely no comparison to what you can make at home on your own and what is available in the local grocery store (or even at the specialty store). Simply open a bottle of vodka that is at least 750 mls. Add in about twelve vanilla beans, whole, and slit from top to bottom. You can scrape some of them out and put the flesh and seeds in to the vodka. Let this mixture sit in a cupboard for about three to six months, giving it an occasional shake. That is it.
