Oven Roasted Sausage Peppers and Potatoes
When it's cold outside a nice warm home cooked meal is all you need to warm up. Roasted vegetables are especially nice to enjoy on a cold winter or autumn day or any other time you're in the mood for a savoury treat. When you roast vegetables they caramelize which intensify the flavour of the vegetables. This also adds a nice sweet flavour to them, as well as crispness and juiciness that's amazing. You can roast pretty much any vegetable you like, and it doesn't require a lot of time either. Within about 30 minutes you will have the best tasting veggies you've ever had. You can dress them up in some olive oil and herbs before you place them in the oven to give them even more flavour. Or you can just add a small amount of oil and salt which also tastes really great. In this recipe from Rossella of Cooking With Nonna, she uses some nice sausage with her roasted vegetables to make a meal out of it. She wanted to create a place where she could share all of the wonderful recipes from her own family and provide a place where others can share their own Nonna's recipes.
She shares classic Italian recipes as well as some easy dinner ideas like this one. Most of her recipes are healthy meal ideas made with whole food too which is always nice if you try and stick with eating whole foods instead of processed foods. You can choose any kind of vegetables you have around in your kitchen, but Rossella uses red potatoes, mini peppers, and red onion. You could also throw in some zucchini and tomatoes if you wanted a whole medley of veggies. She also adds in some garlic, salt, pepper and olive oil too. Then, she added in some sausage that she chopped into rounds. This mixture will taste amazing together, and you and your family will absolutely love this easy meal idea. All you do is sear the sausage in a frying pan to lock in some of the juices in the meat. Then you put them on a plate and cut them into slices, so they are easier to eat. Then, you will slice up all of your vegetables while the oven is preheating to 450 degrees. Then, put all of the veggies into a bowl with some olive oil and any seasonings you like.
Once the oven is all heated up, put all of the vegetables onto a large baking pan spread out evenly and then add the sausage on the sheet too. Place in your oven on the middle rack and allow the mixture to cook for 30 to 40 minutes. First set your timer to 15 or 20 minutes so you can turn everything over halfway through the cooking process, so everything is cooked evenly. When it comes out of the oven, you can serve it right away over some rice or quinoa, or maybe just with a nice green salad or soup. This makes a great meal for leftovers for lunch the next day too. Just reheat in the oven or in the microwave and enjoy.
