First it uses peaches. Nuf said there. Then it has a streusel. Thats a special topping that cooks up lightly sweet and crunchy and goes perfectly against the sweetness of peachness. Heres a trick to peel peaches quickly and easily if youre using fresh ones for these muffins. Boil water in a large pot and pop your peaches in just until the skins split. Remove them with a slotted spoon and let them cool for a few minutes. You can then just slip the skins off the peaches.

These muffins have fresh fruit, although you can use frozen too, if you like. They also have yogurt and rolled oats, great sources of dairy and fiber. And the vanilla glaze adds a sinful sweetness, but you only lightly drizzle it over the tops of the muffins, so you dont have too much sugar.
