Perfect Roasted Potato Rounds
This is a Perfect Roasted Potato Rounds recipe that can be served as a side dish with a choice of grilled meat. It’s a great dinner option because let’s admit, who doesn’t love potatoes? Potatoes have always graced every occasion, and they make mealtime wonderfully comforting. Whether it is mashed potatoes, au gratin or just plain old fries, potatoes top the list on the menu. Russet potatoes recipes, in particular, are among the healthiest of them all as they are very low in saturated fat and sodium with zero cholesterol. They are also high in potassium and vitamin C which are the essential nutrients. Potatoes, in general, are gluten free which makes them the most gluten-friendly food easily available all throughout the year. In this recipe, if you wish, you can also add your choice of Italian herbs to go with the garlic. This is one of those wonderful potatoes recipes that will make mealtime extra tasty and special. 4 russet potatoes, washed and sliced into 1/2 inch rounds
2 Tablespoons olive oil to lightly grease baking sheet
2-4 garlic cloves, minced (depends how much garlic you prefer)
2 Tablespoons olive oil to coat potatoes
1 teaspoon salt
1 teaspoon pepper
Preheat the oven to 375F.
Line a baking sheet with parchment paper and grease the paper with the olive oil.
Place the sliced potatoes into a large pot and cover with water. Add 1/2 teaspoon salt. Bring to a boil and cook for 5 minutes only to parboil. DO NOT OVERCOOK!!! The potatoes need to be firm.
Drain the water from the potatoes and transfer them to a wide large bowl. Let the steam go out of the potatoes.
Meanwhile stir the oil, minced garlic, salt and pepper together. Drizzle over the cooled potatoes and toss gently and lightly to coat.
Arrange the potatoes onto the baking sheet and leave space between them so the will brown nicely. Do not stack or they will not be crispy.
Drizzle any oil remaining in the bowl onto the potatoes.
Place the baking sheet into the oven and roast for 30-40 minutes until the potatoes are golden brown.Remove and serve.
