Pina Colada Cupcakes

The Piña Colada (literally, “strained pineapple” in Spanish) is a tropical rite of passage. It’s got pineapple, it’s got coconut, it’s got rum, please tell me you don’t need me to continue! So, If you like Piña Coladas, getting caught in the rain, if you’re not into Yoga, if you have half a brain, then you are going to want to check out Sally, from Sally’s Baking Addiction’s Piña Colada Cupcakes.

Nothing conjures up images of blue skies, white sand, waves lapping and unadulterated relaxation like the iconic, tropical Piña Colada. Coconut milk, pineapple (this is a cupcake, so no rum – though who’s stopping you;) the flavours go together so undeniably well that the Piña Colada has been the national drink of Puerto Rico since 1978. Sally has found a way to transpose all of this awesomeness into delicious cupcake form. Full fat, tinned coconut milk and 100% pineapple juice add the necessary authenticity to this recipe, and brown, not white sugar, is key if you want to get as close to real cane sugar as possible. Sally also recommends you opt for full-fat coconut milk for this recipe to maximize creaminess. I can’t help but stress the coconut milk component of these cupcakes and not water. You are probably an all-star in the kitchen already, but just in case, because the difference is subtle, but significant. Coconut milk is made my extracting and pressing the sweet white pulp of the coconut. Coconut water comes from the cavity of the coconut and does not have the same fat or protein content that the meat would have. The frosting is a simple, delicious vanilla frosting base infused with coconut extract (in keeping with the theme). It’s creamy, rich and perfect for slathering all over the top of these beautiful creations.

As was previously mentioned, this recipe contains no alcohol, but that doesn’t mean you can’t A) add some (if that’s your thing), or B) serve them with a fruity, tropical drink that has some in it.
