Potato Salad With Honey Mustard Vinaigrette
Potato salad is such a classic dish, and every family has its own way of making it. Try this variation of potato salad with honey mustard vinaigrette and you may start a new tradition in your family.
This recipe uses Yukon Gold potatoes. These are a lightly golden potato with a very thin skin and moist interior flesh. It is possibly one of the tastiest potatoes to use when you are making a dish that highlights this vegetable.
Potatoes are often overlooked as a good food source. If you eat the skin, they are a great source of fiber and nutrients. Potatoes actually have more potassium than bananas or even spinach. They are also a great source of vitamin C, among other vitamins, and potatoes contain trace amounts of iron, zinc and thiamin, all important components for good health. So eat potatoes without concern. They are only about 110 calories each, too, for a medium sized potato.
This recipe also includes other highly nutritious foods including olive oil, eggs, and parsley. We often overlook parsley, too, but it has some great properties that might encourage you to use it often. For starters, parsley freshens breath and so you can use it when you make strong tasting foods, for example, something containing garlic, so that your mouth stays clean and fresh. Parsley is also full of vitamins including Vitamins C, A, B1, and B3, among others.
Olive oil is yet another well know nutritious and very delicious oil. Olive oil is made from olives, and the very best oil is extra virgin and cold pressed. The phytonutrients in olive oil help make it an extraordinary anti-inflammatory and superior to other oils as a result.
Together the ingredients make this a good salad to try on your family. It is quick and easy to make and if you prepare it this morning and put it in the fridge, you and your family can enjoy it for dinner tonight. Pair it with some roasted herb chicken and asparagus for a great combination.
