Pumpkin Chocolate Chip Bread
Pumpkin Chocolate Chip Bread is a great combination of two terrific flavors, pumpkin and chocolate. Although these strong tastes may not seem, intuitively, to work together, once you taste them in a bread or cake, they are a wonderful complement to each other. This recipe is for a simple quick bread. Your young and growing, eager bakers might want to try this recipe out for themselves. Pumpkin bread always bakes up to a beautiful golden orange color and so it looks fabulous when it is cut. Be sure to let this bread cool for best flavor. Pumpkin tastes much better when it is eaten cool rather than warm or hot.
This recipe uses orange juice for part of its liquid. This is a great way to accent the flavor of the pumpkin as well as the chocolate, and not many recipes include it. You could emphasize the orange flavor even more by grating a teaspoon of the orange rind in to this recipe. The other seasonings including cinnamon and so on are also terrific against the orange. This recipe comes together quite easily. Consider blending it by hand. Some times using the mixer can over blend recipes such as muffins and quick breads. You can avoid that by mixing the dish by hand, and it is almost as quick as a mixer (plus you do not then have to clean the machine!).
This is a great recipe and both pumpkin and chocolate are potentially very healthy foods to eat. Pumpkin offers loads of vitamins and minerals and, perhaps most importantly, plenty of fiber. Chocolate is one of the most anti-oxidant rich foods you could eat, especially when you use at least 70 percent cocoa in the chocolate.
