There is something about deep fried foods that we just can’t resist. Deep frying takes ordinary food, and makes it crisp and golden and takes it to a whole new level. To deep fry foods, you need to start with a deep pot and the proper tools so you can insert and retrieve the food from a safe distance. Some of the tools you might consider for deep frying include long tongs, a slotted deep-fry spoon, or a frying basket. There are some simple tips that will help you with your deep frying techniques. To start, you want to choose an appropriate frying oil, one that has a higher smoke point than the desired cooking temperature you are using. Peanut, soybean, and sunflower oils are good choices for frying at high temperatures. Add the oil to a deep pot, making sure to fill it no more than half way full. It’s a good idea to have the walls of the pot rise about four inches above the oil so you won’t have any oil bubble over the side of the pot. This is also a good rule for helping to contain splatters and making cleanup easier. You want to be sure and use enough oil so that you can submerge a small batch of food completely. Then preheat the oil to the cooking temperature. You can use a probe thermometer that is held upright in the center of the pot of oil to check the temperature. For consistent results, you want to cook in small batches to minimize the cooling of the oil that occurs when you add food. It is also a good idea to warm the food to room temperature before frying it. You want to allow the oil temperature to recover between batches. Before putting in the oil be sure to pat the for dry with paper towels, as water will cause the oil to react by splattering. Be sure not to get too close to the oil. Use long tongs, a slotted deep-fry spoon, or a frying basket so you can submerge and remove foods safely.
