Roasted Baby Potatoes
This delicious potato recipe features baby potatoes that are cooked to a gorgeous golden brown. They are laced with fragrant herbs and white wine making them extra special. New potatoes are potatoes that are harvested before they become large and mature. As a result, their taste is sweeter, and their skins are more delicate than their adult counterparts. Many potato recipes require scrubbing and peeling since russets, and yellow golds are larger and have been stored in the ground longer. These mini potatoes are no-fuss because they only require roasting to bring out their best qualities. Although potatoes are often deemed unhealthy, this is usually about how the potatoes are prepared. Potato nutrients include very high amounts of vitamin C and potassium. This roasted baby potatoes recipe uses butter, which turns these potatoes into an exceptionally savory dish. If desired, though, substitute with olive oil which is deemed healthier due to it containing both Omega-3 and Omega-6 fatty acids.

2 1/2 pounds baby yellow potatoes
1/4 cup melted butter (or olive oil)
1/4 cup white wine
2-3 Tablespoons fresh minced garlic
salt and pepper, to taste
2 Tablespoons chopped herbs (rosemary, oregano, or thyme)
1 Tablespoon water
Preheat oven to 425°F.
For easier clean up, line a baking dish with foil or parchment paper.
In a large bowl mix together melted butter, white wine, garlic, salt, pepper, herbs and water.
Wash potatoes, cut off any black pieces and dry with a towel.
Cut potatoes into halves.
Place potatoes in seasoning and mix to coat.
Pour potatoes and seasoning into the prepared baking dish.
Bake for 35-40 minutes or until potatoes are tender when poked with a fork.
Bake an extra 5 or more minutes until golden.
