Salted Caramel Popcorn with Almonds
Salted Caramel Popcorn with Almonds combines two basic tastes that our taste buds recognize and enjoy, salt and sweet. Some taste pundits argue that for a dish to be fully satisfying it needs to include all five basic flavors of sweet, salty, sour, bitter and umami. That is quite a tall order, and very few recipes can accomplish that in one go. Of course, some soups manage it, such as Thai sweet and sour soup, but even a few of the basic flavor together, rather than just one overwhelming taste (just sweet, for example, or just sour) can be too much. On the other hand, certain candies (sour keys, for example) thrive on that very principle of overwhelming the taste buds with one flavor.
Well, this recipe includes a few flavors and some great contrasting textures to give this a well rounded experience for your taste buds. And almonds are always a great ingredient in almost any dish you can think of. They have a light, slightly sweet, of course, nutty flavor that works well with chicken, fish, and as here, popcorn. The nice crunch of the almonds is great against the lighter, more tender crunch of the popcorn.
The almonds and the popcorn are sweetened up with the brown sugar syrup you make to create the caramel corn. That is an easy step in this recipe. Once you pour this over the popped corn, you bake the whole thing for about one hour. Do not rush this step, so you do not burn the snack. When it bakes, the whole house will be filled with the lovely scent of brown sugar, popcorn, and almonds. You can guarantee the family will hang around while you are making this snack. Now is the time to get them to volunteer to vacuum, clean their rooms, and do the dishes or the laundry. Enjoy!
