Skillet Balsamic Garlic Chicken

We are all in search of easier recipes to cook, especially if you are busy or just would rather not spend all day in the kitchen! This awesome looking Skillet Balsamic Garlic Chicken is a simple, heathy, protein filled one pot meal that will be sure to be a hit on your dinner table. It's great to come across these one pot meals, I will be honest, I don't mind doing dishes, but I always like to find a way to make less dishes for myself! I bet you are the same! So it's recipes like this that make a great meal in one pot, that I love the most.

It is so simple and quick too. All you need are the chicken breasts and a lot of garlic, some balsamic vinegar, broth and some mushrooms of course! Can't forget the mushrooms! Like the author of this recipe from Cookies & Cups, I love garlic and mushrooms, there is something so savoury about the combination. And it is really not unhealthy. Like she says in the post, you don't even need to pair a carb with this, it is great just on it's own with a salad. If I was going to put anything with it, I would probably do quinoa or brown rice.

Nutritionally, it is better to fill up on vegetables and protein than carbs, because your body uses the nutrients from the protein and veggies over a longer period of time. Whereas, carbs are not utilized in the best way, they burn up really quick, sometimes leaving you feeling still hungry after. The simple sugars are also sometimes stored was fat if your body is not getting enough nutrients. So that is why it is a better idea to just stick to a protein and vegetable rich meal!
