Skinny Lemon Raspberry Cheesecake Trifle

This triple layering of cream, lemon and angel food cake will have you drooling for seconds (and more!). Keep it light in calories and less fat by using lite versions of the various ingredients. As it is angel food cake is much lower in calories and fat than many other cakes. That is because it is primarily a blend of egg whites and sugar plus flour (in some recipes you may also fold in ground nuts). Most of us buy our angel food cakes these days, but it is too bad that we do. This cake is particularly easy to make. When made from scratch, it is visually more attractive, has a denser bite and more substantial texture, and the crumb is much whiter and more appealing to the eye. As well, from scratch, this cake can have as few as three ingredients, egg white, sugar, and flour. Angel food cake is a great cake to tear up for Trifle. It absorbs other flavors and liquids wonderfully while not losing its own body and texture.

This recipe combines lemon flavors throughout the trifle, and is made without having to be baked. So you simply prepare and set up the various layers then let the whole treat mellow in the refrigerator for a few hours to allow the flavors to come together and the cake in the trifle to absorb the pudding and other cream blends.

This recipe can be served with a sprinkle of almonds on top to bump up the nutrition as well as decorated around the edge with lemon slices to make it really pretty and appealing.
