Slow cookers are really fabulous pieces of equipment and one that you should always try to have in yours. It can help make the toughest meat tender, and make great meals easy to throw together. Toss everything in to a slow cooker and by the end of the day you will have a meal that will make your family sing.
Broccoli and beef just seem to go well together, and that is the case with this recipe. The beef is prepared using the slow cooker, and the broccoli is added later, at the end, and cooked just long enough to reach the el dente stage. Then the entire dish can be spooned over rice, noodles, potatoes or even quinoa. You might even consider making two different bases and let people choose the one they want. Or, just make something new, like quinoa, and let everyone try this nutritious pseudo-grain. This dish offers plenty of vitamins, minerals, and proteins, with relatively little fat. You could serve yogurt on the side for people to put on top of this dish to bump up the food value and provide some fat to the dish. Or, of course, make a special dessert to go with the dinner that provides lots of fat in the cooking!
Any way you make it, beef and broccoli is a great flavor combination that most people really enjoy. This dish could also be made with chicken if your family does not enjoy beef (of course, who doesn’t like beef?). Try this dish soon and you may find that you choose to make it often.
