Of course a southern recipe always includes pecans and this dish does not disappoint. But what's the most fun about this chocolate cake is the surprise ingredient your kids will just love. The first time you make it, don't have the kids help. Just put the cake on the table and serve it out. There will be cries of utter delight as they bite in to their first piece, and plenty of 'Thanks, mom!' when they see the treat you have prepared. On repeat coca cola chocolate cake days (you didn't really think you'd get away with making this cake just once!) you will have plenty of little helpers to oversee that enough of this specialty ingredient gets into the cake.
The topping is a simple chocolate glaze. You can even use commercial frosting if you prefer, although most southerners cook from scratch. Still, just sprinkle the top with pecans and all will be forgiven.
Pecans are a staple in southern cooking, perhaps because the Pecan tree is native to the south, although it is being cultivated elsewhere around the world today. It is a member of the hickory tree family. The nuts are technically fruit, called drupe. Pecans are a uniquely flavored nut, buttery and subtle, and really give a wonderful sweet taste wherever they are added. Like every nut they are as nutritious as they are delicious.
Nuts contain good fats, are loaded with vitamins (for pecans, especially vitamin E), minerals and properties that are thought to help ward off cancer. Of course they are also calorie loaded and so some restraint should probably be exercised when eating them. It is rare outside the south to get pecans any way but already dried and shelled, but if you can find a place where they'll let you pick them fresh from the tree, you'll discover that the tree itself is a wonder to behold and gleaning fruit yourself is a very special way to pass the time.
This cake does use coca cola and this southern author recommends sticking with the brand name. This is probably a good idea since, although there are plenty of good imitations of 'the real thing', when you put it into a recipe the proportions are important to maintain flavor.
