Southwestern Cobb Salad
This Southwestern Cobb Salad with Cilantro Lime Vinaigrette is so rich with ingredients that to call it a salad seems to sell it a bit short of all that it has to offer. Cobb salad is a fabulous blend of egg, greens, meat and so many other ingredients. It is delicious and wonderfully filling. This salad was supposedly invented when a restaurateur, Robert Cobb, was scrounging around in his kitchen late one night looking for something to eat. Apparently, he tossed together the ingredients for Cobb salad, and so it was born. Histories of food are sometimes hard to uncover, but whoever made this salad had a love of good food.
This salad, traditionally, holds at least two meats, several greens, a blue cheese and dressing. In this particular recipe a new twist is added in the cilantro lime vinaigrette.
