When you're always on the go, it can be hard to get in healthy, nutritious meals throughout the day. Here is an awesome idea to Stack up a Make-Ahead Portable Lunch! When you're always used to the same old thing everyday for lunch, life can get monotonous and boring. But what if you were to have some new ideas that you could add into the rotation? This might make packed lunches a whole lot more fun and exciting! It's also way better than eating out for lunch all the time, which can be unhealthy and get super expensive. These ideas are affordable, practical, delicious and nutritious ideas for your lunch!
There are so many yummy sounding recipes in here, like Spicy Sausage and Kale with couscous, blanched kale, chickpeas, yogurt, and sausage. Sounds like something you could find at a deli or cafe doesn't it? Or how about the Tex Mex shrimp that has quinoa in it with salsa, corn, onion, avocado, beans and shrimp! That sounds really awesome and would be such good protein to get you through the day. They are all super easy to make ahead of time, and would even make good dinners or sides the night before if you doubled or tripled the recipe.
I love simple and healthy lunches like this that just pack a load of nutritious foods into them. It's so important that we nourish our bodies well throughout the day as we work to keep our brains active and healthy. These would also make great camping pre packed meals, or awesome for a picnic, or to bring on a hike with you.
