Strawberry Cake Mix Cookies

These strawberry cake mix cookies super simple to make and require only four ingredients. This is one of the yummy cookie recipes from Jessica of Butter With A Side Of Bread, and she makes this recipe with a boxed cake mix instead of a regular cookie dough. Using boxed cake mix to make cookies makes soft and moist cookies that have a fluffy and light inside. She uses a strawberry cake mix to make the cookies a nice, light pink colour with a delicious strawberry flavour and she also adds some candies on top to make them look even cuter. While these cookies would be great for any occasion, they would be great for Valentine's Day since red and pink are the colours of love. But you can make this recipe for any holiday and just change up the colours of the cake batter and the candies. All you need for this recipe will be some M&Ms candies, a box of strawberry cake mix, eggs and butter. First, line your baking sheets with a square of parchment paper. You can even buy them in sizes that will perfectly fit 12 inches by 16-inch cookie sheets, so you don't have to cut them to size. Lining your baking sheets ensures that you won't have anything sticking to your baking sheets meaning less of a mess to clean up after you're all done.

Jessica says that using a standup mixer with a cookie batter paddle is great for making cookies. It mixes the dough up really well without over mixing. She also uses a cookie scoop to make the perfect cookie sizes. You can get cookie scoops in three sizes a 1/2 tablespoon, a 1.5 tablespoon and a three tablespoon scoop. She uses the 1.5 tablespoon scoop for her cookies to get them to be all the same size. You could also use a regular old measuring spoon if you don't mind your cookies being a bit smaller than her's. To make the cookies just preheat your oven to 350 degrees. Then you simply mix the entire box of cake mix with the eggs and then add in the melted butter. Next, you will mix in the candies and chocolate in, but Jessica advises to do this part by hand so that you don't crush up the candies. Once the dough is all mixed well, start to create your cookies and place them on the baking tray, spaced out evenly. Bake for 8 to 10 minutes much like regular chocolate chip cookies, and then let them cool for a few minutes on the cookie sheet. Then take them off and put them on a cooling rack to cool down completely.

This recipe makes three dozen cookies, so this is one of the yummy cookie recipes you could make for a bake sale or to package up and give away as treats.
