A big pot and a slotted spoon are all you need to make and enjoy this recipe for Sweet and Sour Cabbage with Bacon. It is a quick and easy dish to make, and very affordable. If vegetables were priced according to their nutritional value, though, cabbage would be a lot more expensive. Let’s be glad it is not. This dish combines green cabbage, bacon and plenty of sweet and savory seasonings to get its flavor impact. And cabbage, when cooked, becomes beautifully sweet, and tender, and is a delightful side dish. Some times people do not like cabbage becomes of its characteristic smell; however, set that aside and just take a big bite. That will convince you of just how delicious it really is.

Here, the bacon is prepared first, in oil. You can skip the oil since the bacon will generate plenty of fat by itself. In fact, you might want to drain off some of that fat before you continue with the cabbage and other ingredients in this recipe. The cabbage is quickly cooked up and the bacon added back in. It is that easy. This dish offers up flavors that include sweet, salty, and sour and umami (in the bacon and the cabbage). That is arguably four of the five main flavors we taste in our mouths. And some experts say that for a dish to be truly satisfying, it needs to satisfy all five of our taste areas. Well, if that is the case, this dish certainly comes close.

This is a really nutritious dish, as long as you are careful with the bacon, the fat, and the salt levels. It can be tempting to use too much of any or all of these fabulous flavors. But go easy. The cabbage, even on its own, is a lovely flavor of sultry and smooth and sweet taste. There is no need to smother it under other tastes (no matter how yummy that bacon is, in this recipe, it is intended to accent and punctuate the cabbage). So enjoy this dish anytime. It works with just about any thing you might be planning to put on the dinner table tonight.
