Taco Spaghetti loaded with cheesy goodness
Looking to spice up dinner a bit? Sometimes it can get a bit boring to make the exact same recipes all the time, and you might find yourself wanting something different. Of course, we'll always have our favourite go-to meals, but it's fun to bring something new into the recipe rotation every once in a while. This is one of the easy dinner ideas from Holly of Life In The Lofthouse. She takes a regular spaghetti and brings it to the next level by adding some extra spices and lots of cheese. Cheese is always a safe bet when it comes to kids, they just love the stuff, so you know this recipe will be a hit with kids. Plus everyone loves pasta so there's a good chance this recipe might become a new favourite in your household. This recipe makes spaghetti into a casserole recipe with loads of taco flavouring and cheese for an unforgettable dish. Usually, you might do spaghetti with some tomato sauce and some meat, but for this recipe, you'll make a delicious cheesy tomato sauce with some tomatoes and some velvety cheese.
All you need is your favourite spaghetti noodles, lean ground beef, a pack of low-sodium taco seasoning, water, plain greek yoghurt, Rotel which is diced tomatoes and green chillies, a package of Velveeta cheese, shredded cheddar cheese and some green onions. You can use ground chicken or turkey for a leaner option than beef if you like. Just always be sure to buy any meat products organic and pasture raised if possible. Not only are the animals raised more humanely in more natural settings they are also leaner because they aren't fed soy feed. You can get pasture raised meats from local farmers, just ask around for the best source. Also, the cheese you use should come from an organic, pasture-raised source for the same reasons as the meat. You can also make your own taco seasoning by mixing some paprika, cayenne, cumin, garlic powder, onion powder and some salt in a container to keep on hand. You can find different taco seasoning mix recipes online, or you can try making it to your own taste. First, get a casserole dish or a dish that you like to use for casserole recipes and spray or grease it, so the pasta doesn't end up sticking to the sides.
Then, on the stove, boil your spaghetti noodles in a big pot of salted water until cooked, but not over cooked and then drain the pasta well. While the noodles are cooking, you can cook the meat. Place the meat in a large pan and break apart with a wooden spoon cooking until it's not pink anymore. Be sure to drain the fat out as well before you add in the taco seasoning and cook for another 5 minutes. Next, you'll stir in the greek yoghurt, the Rotel, and Velveeta cheese to the meat and keep stirring to melt the cheese. When the cheese has melted, and everything is coated, you can then add in the spaghetti noodles and coat them well too. Then place everything in your casserole dish and cover it all with some shredded cheese. Put it in the oven set to 350 for 20 to 30 minutes until the cheese is melted and it's hot.
