The Ultimate Guide to Chocolate Chip Cookies
Don't you just love science? Well, if you do, you will absolutely love this post from Handle the Heat testing out varieties of baking ingredients in her version of the Ultimate Chocolate Chip Cookies. Have you ever wondered what would happen to your cookies if you did not chill the dough. How about if you used only baking powder and skipped the baking soda? Every ingredient in baking has a purpose, and these purposes are not always just about flavor. They change the size, the texture, the density and so on.
I don't know how many times I have wanted to make chocolate chip cookies on the spur of the moment and realized that I did not leave my butter out long enough, or I did not have baking soda, or I only had one kind of sugar and the recipe was calling for both! What about those times that you do not have any brown sugar (only white!) - just how will your cookies turn out if you just ignore the brown sugar?
The basic recipe in question is the classic Tollhouse cookie recipe as the 'control' and then all sorts of variations to play around.
