Vegetable Barley Soup

1/3 cup pearl barley
4 cups water
6 medium potatoes, peeled and chopped into 1/2 inch cubes
1 can (796ml) diced tomatoes
1 can (796ml) crushed tomatoes
2 carrots, peeled and chopped into 1/2 inch cubes
1 celery stick (use the leafy parts for more flavor)
1 cup chopped green beans
1 cup frozen peas
1 cup chopped spinach, Swiss chard, or kale
1 onion, peeled and diced
2 Tablespoons ghee or butter
salt and pepper to taste
In a large pot, bring the barley and water to a boil.
Once it boils, turn down to a simmer.
Add potatoes, carrots and celery and continue to simmer.
Golden fried onions are the secret to this soup.
In a medium saucepan over medium-high heat, fry the onions in ghee or butter until golden brown.
Add onions to the soup pot and stir in.
Continue to cook until the potatoes are tender.
Add in the diced and crushed tomatoes, green beans, peas and chopped greens.
Cook for another 10 minutes on low heat.
Add salt and pepper to taste.
