Thank you to Jen at the Yummy Healthy Easy food blog for this White Chocolate Butterscotch Cookies recipe. This butterscotch cookie recipe is easy to make, and delicious to eat. The cookie recipe makes about three dozen cookies and is made entirely made from scratch. As with most cookie recipes, you will combine your dry ingredients, then cream your butter, brown sugar, eggs, and molasses together. The combination will produce caramel flavor throughout this cookie and helps to give it its rich blonde color. The two flavors of chips are stirred in, and the cookies scooped onto your baking sheet and baked. This produces a yummy sweet cookie perfect for lunch boxes and afternoon tea!

We take the chocolate chip so for granted, but it too has a story dating back to 1937. We must give credit to the invention of the chocolate morsel to Ruth Graves who added cut-up chunks of a semi-sweet Nestle chocolate bar to a cookie recipe! The flavor and success of her cookies took on a life of their own and Nestle started out by including a small chopping tool right in the chocolate bar packages. This, of course, evolved to the chocolate chip or morsel which we have all grown to enjoy. Cookie recipes have been created for so many flavors including bittersweet chocolate, peanut butter, butterscotch, mint, white, milk and white and dark swirled chocolate chips. Do you have a favorite flavor and go to a cookie recipe that your family always asks for? These little chips can also be used as a garnish, in cakes, pancakes and melted down to make ganache or coatings for such a variety of desserts. There is a small amount of molasses used in Jen's cookie recipe as well. Did you know that molasses helps to keep cookies chewy and fresh for days?
