We have a special place in our hearts for zucchini muffins as they helped us get through many a morning at a job we didn’t particularly enjoy. Every day at 10 am was break time, and a bunch of us would head over to the café across the street. Our daily “usual” was coffee and a delicious zucchini muffin, very much like the ones in this photo! They didn’t have any raisins or cranberries in them, as this recipe calls for, but they were full of walnuts. Perfect, in our books!
We so looked forward to this coffee break with the zucchini muffin each and every day. It really got us through the early mornings and energized us too. That’s why, when we look at this photo, we’re filled with happy nostalgia – and we’re excited to try the recipe! There’s just something so special about zucchini muffins!
So, this recipe is surprisingly similar to many banana bread recipes, only you use zucchini instead of banana! It’s also very versatile. Although it calls for nuts, cranberries, and raisins, you can either skip these ingredients or just add one or two. As we mentioned, we loved the nutty ones at the café across the street! There’s just something about that texture – soft muffins with a bit of crunch – that is so pleasing to the taste buds.
You could even try using a mixture of your favourite nuts, if you’re really nuts about nuts – as we are. Just make sure you use a moderate quantity so you don’t overload the dough!
